This wine boasts a distinctive personality and has excellent aging potential.
REGION: Rías Baixas
APPELLATION: Val do Salnés
SOILS: The soils are granitic with sandy clay characteristics. The vineyard is planted in the traditional pergola style with 800 vines per hectare.
WINE MAKING: The grapes are hand-harvested and carefully placed in perforated boxes weighing 15 kg each. After meticulous grape selection, they undergo complete destemming followed by gentle air compression pressing. The clarified juice is then chilled for debourbage at low temperatures. The alcoholic fermentation occurs spontaneously under controlled temperatures (12-15ºC), ensuring optimal flavor extraction. Aging on lees takes place in barrels for 12 months. Fining with is in glass and tangential filtration complete the process, ensuring clarity and purity in the final wine.
