Calcaneus Etna Bianco “Ginestra”

95% Carricante, 5% Grecanico, grown on the eastern side of Mt. Etna at an altitude of 850m above sea level. Soils are volcanic with sand. Vines range in age from 30-40 years old. After pressing, the juice is cold macerated in stainless steel tanks. Fermentation occurs under temperature control. The wine is aged on its fine lees for 6-8 months, followed by a minimum of 2 months in bottle prior to release.
