Calcaneus Etna Rosato “Romice”

90% Nerello Mascalese, 10%, Nerello Cappuccio, sourced from multiple vineyard sites on the northern slope of Mt Etna at an altitude around 650m above sea level. Soils are volcanic. Vines range in age from 70-90 years. Following around 3 hours of skin contact, fermentation occurs in temperature controlled stainless steel tanks. The wine ages for 6 months in stainless steel, then spends a minimum of 2 months in bottle prior to release.
