Vineyards: The vineyards for the Mele Sauvignon are oriented to the northwest, facing the Julian Alps and the Canin Glacier, which provide a cool microclimate slowing maturation.
Winemaking: The grapes are harvested and destemmed in late August, then macerated for 20 hours under CO2. 20% of the must is fermented and matured on its lees in large wooden barrels, the rest in stainless steel tanks. The wine is assembled and bottled at the full moons between the end of March and May.
